At True Delicious, every new product has a story—and our new Sugar-Free Almond Biscotti might be one of the most meaningful ones yet. These little twice-baked beauties took months of research, testing, and (honestly) a lot of stubbornness to get right. And it all started with a friend.

A dear friend of ours, living with type 2 diabetes, kept asking if we could make a biscotti she could enjoy without worrying about her blood glucose level. At the same time, we saw so many comments online from people asking about sugar-free or low-carb options. Others mentioned keto, or that they were avoiding sugar for health reasons. It became clear that there was a real need—and we wanted to be the ones to fill it.
The Challenge: Crunch Without Sugar
If you know biscotti, you know one thing is non-negotiable: the crunch. We tried every natural sweetener we could find. We tried blends, fruit-based sugars, fancy substitutes, grain-free alternatives—you name it. But no matter what we did, the biscotti stayed soft or crumbly. They tasted good, but they didn’t snap the way a real biscotti should.
Finally, after many test batches (our team tasted so much almond flour, they may still be dreaming about it), we realized that erythritol and monk fruit were the only sugar-free combination that gave us the authentic True Delicious crunch. We fought it, we tried to avoid it, but in the end, the recipe—and the biscotti themselves—made the decision for us.

Once the texture was right, the flavor naturally followed. Our sugar-free biscotti are made with 100% almond flour, giving them that rich, naturally nutty taste that pairs perfectly with coffee or tea. They’re grain-free, low-carb, keto-friendly, and—most importantly—delicious.

Now that our classic Sugar-Free Almond Biscotti are a hit, we’re already working on the next flavor: Sugar-Free Chocolate Biscotti. A biscotti made with almond meal, sugar-free chocolate, erythritol, and monk fruit doesn’t come cheap—but we know the value it brings to people who otherwise can’t enjoy a treat like this.
