The Original Biscotti Recipe

The natural goodness of almonds brings a satisfying crunch, while a hint of citrus adds a wonderful aroma. Traditionally, they’re enjoyed dipped in Vin Santo, making them a beloved treat at the end of a meal in Tuscan trattorias and cafés.

Ingredients for about 1.5 lbs of biscotti

  • 1¼ cups (200 grams) almonds, unblanched with skins on
  • 2½ cups (300 grams) all-purpose flour
  • 1 cup (200 grams) granulated sugar
  • 1 tablespoon lemon zest (optional)
  • 1 teaspoon baking powder
  • ½ teaspoon fine salt
  • 2 eggs
  • 2 teaspoons honey 
  • 1 teaspoon vanilla extract
  • ⅓ cup (80 grams) unsalted butter, melted and cooled

Instructions:

  1. Preheat your oven to 350°F (180°C) and toast the almonds on a baking tray for 10-12 minutes. Let them cool, but keep the oven on.
  2. Line a large baking tray with non-stick parchment paper.
  3. In a medium bowl, whisk together the flour, sugar, lemon zest, baking powder, and salt.
  4. Create a well in the center of the dry ingredients and add the eggs, honey, vanilla extract, and melted butter. Slowly whisk the wet ingredients, gradually incorporating the dry.
  5. Before fully mixed, switch to a wooden spoon or your hands, and as the dough forms, fold in the toasted almonds.
  6. On a lightly floured surface, knead the dough gently until smooth and divide it into four equal portions. Roll each into a 10-inch (25cm) log.
  7. Place the logs on the prepared baking tray and bake for 20-25 minutes until golden brown.
  8. Remove from the oven and cool on the tray for 10 minutes.
  9. Lower the oven temperature to 300°F (150°C).
  10. While the logs are still warm, slice them into 3/4 inch pieces each using a serrated knife. Lay them cut-side up on the tray and return them to the oven for an additional 10-15 minutes to achieve that perfect crunch.
  11. Cool on a wire rack and store in an airtight container.

Variants

Substitute almonds with your favorite nuts, dried fruits or add chocolate chips.

 

How long do they keep?
